Turkey Apple burgers – weekday version

Make 8-10 burgers depending on your size choice.

I whipped this up one busy afternoon when we had unexpected company for dinner. Within minutes, I had a nutritious meal on the table that delighted everyone from young to… less young… and shared the very best of Fall in Virginia. Happy cooking!

Oh one more thing! You just might have all that you need already sitting in your pantry!

Ingredients

Burgers

  • 2 lbs. Pasture Raised Ground Turkey
  • 1 large apple, shredded (any variety, but sweet, slightly tangy, and local is best!)
  • 1/4 yellow onion, shredded
  • 2 cloves minced garlic
  • 1 tsp dried thyme (or sage for a fun change)
  • 1&1/4 tsp salt
  • 1/2 tsp pepper
  • up to 1/3 cups breadcrumbs
  • 2 tbsp your fat of choice (mild-flavored oil, bacon fat, lard)
  • *Optional* sharp white cheddar cheese slices.

    Caramelized Onions

    • 1 yellow onion sliced thin.
    • 2 tbsp your fat of choice (mild-flavored oil, bacon fat, lard, or butter).

    Directions

    1. Drain excess liquid from the ground turkey and add it to a medium bowl. Do not squeeze the ground turkey, just throw out the extra liquid in the turkey bag.
    2. Add into the bowl with turkey: shredded apples, shredded onions, garlic, thyme, salt and pepper.
    3. Mix all ingredients by hand. Once mixed, if the turkey apple mixture is too loose to form a patty, mix in up to 1/3 cup of breadcrumbs until you are able to form patties that do not fall apart immediately. It will still be looser than working with ground beef patties.
    4. Form 8-10 patties, as desired.
    5. Heat a large skillet to medium-hot with 1 tbsp of your fat of choice. Once it is hot, add the burgers. Cook for 5 min on one side, then flip to the other and turn the burner to medium low. Add cheese if desired and cover burgers for the next 5 min to allow complete cooking. (165F internal temp). Add additional 1tbsp fat of choice to the pan as needed if you are cooking in batches.
    6. While cooking burgers, caramelize onions in a separate pan.
    7. Heat 2tbsp of your fat of choice in a separate pan.
    8. Once hot, add the sliced onions. Cook over medium heat for 5 min, stirring every minute. After the first 5 min, reduce the heat to low and cook for and additional 5-10 min until tender and carmalized.
    9. Serve with or without buns, layering onions on top of the burgers.

    NOTES: Some yummy sauces to consider are Mayo, Brown Mustard, Honey Mustard, and BBQ sauce.

    SIDE DISH RECOMMENDATION: This is great with some roasted sweet potato cubes and a good autumn salad.
