When you’re stuck making the same old recipes week after week for your family, a little inspiration goes a long way.
Joanne brought just that inspiration one Fall Day when she told me her Apple Turkey Burger recipe. I was at the Farmer’s Market and couldn’t remember it fully, but with the help of Google, I attempted to recreate the recipe as best as possible and made the “Weekday Version” (available on another blog post.)
Joanne graciously shared her recipe with me later, and now I’m passing fresh inspiration along to you.
When pumpkin spice just doesn’t cut it for celebrating the cooler weather anymore, try this “gourmet version” of Apple Turkey Burgers.
This Gluten Free recipe adds sauteed onions, herbs, spices and apples into the ground turkey, with a hint of bacon grease to add extra delight.
Ingredients
- 2 tbsp bacon renderings, divided
- 1 cup, 1/4” diced sweet onions
- 1 cup peeled & 1/4” diced Granny Smith apples
- 1 tbsp Minced garlic
- 1 pinch crushed red chili pepper flakes
- 2 tbsp chopped fresh parsley
- 1 lb. pasture raised ground turkey (available here)
- 1 pasture raised egg yoke
- 2tbsp coconut flour
- 1tbsp powered mustard
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
Directions
- In a large cast iron skillet over medium-low heat, melt 1 tbsp bacon renderings.
- Add onion and sauté for 10 minutes, stirring occasionally, onions will be softened.
- Add green apple and sauté for 10 minutes, stirring occasionally. Apple will be softened.
- Add garlic and red pepper flakes; sauté for 1 minute, stirring constantly. Garlic will be fragrant.
- Add chopped fresh parsley. Turn off heat and set aside to cool for 5 min.
- In a large bowl, place the ground turkey.
- Combine the coconut flour, mustard, salt & pepper in a small bowl and pour over the turkey.
- Add the egg yolk.
- Top with the cooled apple mixture.
- With clean hands, mix to combine. Avoid over-mixing, which can make the meat tough.
- Divide mixture into 4 quarters and shape each into a burger.
- In the same skillet used for the apple mixture add the additional tbsp of bacon renderings and warm to medium heat.
- Add burgers and cook for 4 minutes. Turn and reduce heat to low and cover. Cook for an additional 10 minutes. Serve warm.
